Ingredients:
- 2 cups sliced carrots
- 2 tablespoons sesame oil
- 2 tablespoons ponzu sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- Green onions for garnish
Instructions:
Heat sesame oil in a pan or wok over medium-high heat
Add minced garlic and ginger to the hot oil and saut for 1-2 minutes until fragrant
Add sliced carrots to the pan and stir-fry for about 5-7 minutes until they start to soften but remain crisp
In a small bowl, mix ponzu sauce, soy sauce, honey, and a pinch of salt and pepper
Pour the sauce mixture over the carrots in the pan and stir-fry for an additional 2-3 minutes until the carrots are well coated and the sauce thickens slightly
Sprinkle sesame seeds over the stir-fry and toss to combine
Remove from heat and garnish with chopped green onions
Serve hot over steamed rice or noodles
