Ingredients:
- 4 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons lemon juice
- 1/4 cup water
- 2 tablespoons cornstarch
- 1/4 teaspoon almond extract optional
Instructions:
In a large saucepan, combine the cherries, sugar, lemon juice, and water
Cook over medium heat, stirring occasionally, until the cherries release their juices and the mixture comes to a simmer
In a small bowl, whisk together the cornstarch and a few tablespoons of cold water until smooth
Stir the cornstarch mixture into the simmering cherry mixture
Continue to cook and stir until the mixture thickens and becomes glossy, about 5 minutes
If desired, stir in the almond extract for added flavor
Remove the saucepan from heat and let the cherry pie filling jam cool completely
Transfer the jam to sterilized jars, seal, and store in the refrigerator
Use as a delicious topping for cakes, pies, or toast
