Ingredients:
- 4 large Portobello mushrooms
- 1/2 cup pesto sauce
- 4 burger buns
- 1 cup fresh spinach leaves
- 1/2 cup goat cheese
- 4 squares of dark chocolate
- Salt and pepper to taste
- Olive oil for grilling
Instructions:
Preheat your grill to medium-high heat
Clean the Portobello mushrooms and remove the stems
Brush both sides of the mushrooms with olive oil and season with salt and pepper
Grill the mushrooms for about 4-5 minutes on each side, until they are tender
While grilling, cut the burger buns in half and toast them lightly on the grill
Assemble the burgers by spreading pesto sauce on the bottom half of each bun
Place a grilled Portobello mushroom on top of the pesto sauce
Add a handful of fresh spinach leaves on top of the mushroom
Crumble goat cheese over the spinach
Place a square of dark chocolate on top of the goat cheese
Finally, top with the other half of the burger bun
Serve hot and enjoy your unique Pesto Portobello Burger with Greens & Chocolate
