Ingredients:
- 4 cups Concord grapes, washed and stemmed
- 1 1/2 cups granulated sugar
- 1/4 cup water
- 1 lemon, juiced
Instructions:
Place the washed and stemmed Concord grapes in a large pot
Add 1/4 cup of water to the pot and bring it to a boil over medium heat
Once boiling, reduce the heat to low, cover, and simmer for 10-15 minutes until the grapes become soft and begin to break down, stirring occasionally
Use a potato masher or the back of a spoon to crush the grapes further and release their juice
Strain the grape mixture through a fine-mesh sieve or cheesecloth into a clean bowl, pressing to extract as much juice as possible
Discard the solids
Return the grape juice to the pot and add the lemon juice
Stir in the granulated sugar, and bring the mixture to a boil over medium-high heat
Once boiling, reduce the heat to medium and simmer for about 15-20 minutes, or until the jelly reaches your desired consistency
Stir frequently to prevent sticking
To test the jellys readiness, place a small amount on a chilled plate
If it sets and wrinkles when pushed with your finger, its done
Remove the pot from the heat and skim off any foam that may have formed on the surface
Pour the hot grape jelly into sterilized jars, leaving about 1/4 inch of headspace
Seal the jars with lids and let them cool to room temperature
Once cool, store the Concord Grape Jelly in the refrigerator
It will continue to thicken as it cools
