Ingredients:
- 1 cup quinoa, cooked
- 1 cup broccoli, finely chopped
- 1 cup cauliflower, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Cooking spray
Instructions:
Preheat oven to 375F 190C
In a large bowl, combine cooked quinoa, chopped broccoli, chopped cauliflower, Parmesan cheese, breadcrumbs, beaten eggs, minced garlic, dried oregano, salt, and pepper
Mix until well combined
Form the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper
Spray the bites lightly with cooking spray to help them brown in the oven
Bake in the preheated oven for 20-25 minutes or until the bites are golden brown and firm to the touch
Remove from the oven and let them cool slightly before serving
