This vegan lentil curry is a hearty and flavorful dish thats perfect for a cozy dinner. Packed with protein-rich lentils and fragrant spices, its both nutritious and delicious. Plus, its easy to make and can be customized with your favorite vegetables.
Ingredients:
- 1 cup lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 14 oz coconut milk
- 2 cups vegetable broth
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions:
Rinse lentils under cold water and set aside
In a large pot, heat olive oil over medium heat
Add diced onions and minced garlic, cook until softened, about 5 minutes
Add lentils, curry powder, cumin, coriander, turmeric, and paprika to the pot
Stir well to coat the lentils in the spices
Pour in coconut milk and vegetable broth
Season with salt and pepper
Bring to a simmer and cook uncovered for 20-25 minutes, or until lentils are tender and the curry has thickened
