A filling Tex-Mex dish made with diced ham, black-eyed peas, and aromatic spices that is served over rice.
Ingredients:
- 1 lb dried black-eyed peas, soaked overnight
- 1 lb ham, diced
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 can 14 oz diced tomatoes with green chilies
- 1 jalapeo, seeded and finely chopped
- 1 tsp cumin powder
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 4 cups chicken broth
- 2 cups water
- 2 tbsp vegetable oil
- Fresh cilantro, chopped for garnish
- Cooked rice for serving
Instructions:
In a large pot, heat vegetable oil over medium heat
Add diced ham and cook until browned
Remove excess fat
Add chopped onion and minced garlic, saut until softened
Stir in soaked black-eyed peas, diced tomatoes with green chilies, chopped jalapeo, cumin powder, chili powder, smoked paprika, salt, and pepper
Pour in chicken broth and water
Bring to a boil, then reduce heat to simmer
Cover and cook for 1
5 to 2 hours or until black-eyed peas are tender, stirring occasionally
Adjust seasoning if needed
Serve over cooked rice, garnished with fresh cilantro
