Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- Royal Icing:
- 2 cups powdered sugar
- 1 large egg white
- 1/2 teaspoon vanilla extract
- 2-3 teaspoons milk
- Food coloring optional
Instructions:
In a bowl, whisk together flour, baking powder, and salt
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredients to the wet ingredients, mixing just until the dough comes together
Divide the dough into two equal portions and shape each portion into a disk
Wrap the disks in plastic wrap and refrigerate for at least 1 hour
Preheat your oven to 350F 175C and line baking sheets with parchment paper
Roll out each disk of dough on a floured surface to about 1/4 inch thickness
Use your favorite Christmas cookie cutters to cut out shapes and transfer them to the prepared baking sheets
Bake the cookies for 10-12 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely
For the royal icing, in a medium bowl, whisk together powdered sugar, egg white, and vanilla extract until smooth
Add milk, 1 teaspoon at a time, until the icing reaches your desired consistency
For outlining, it should be thick, and for flooding, it should be a bit runnier
If desired, divide the icing into smaller bowls and add food coloring to each bowl
Fill a piping bag fitted with a small round tip with the icing and decorate the cooled cookies as desired
Let the cookies sit for a few hours to allow the royal icing to set completely before storing them in an airtight container
