Ingredients:
- 1 lb corned beef, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 head cabbage, chopped
- 2 carrots, sliced omit for keto
- 2 stalks celery, sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
Set some oil on medium heat in a big pot
It will take about 5 minutes of cooking after adding the diced corned beef until it turns brown
Cut up the onion and garlic and add them to the pot
Cook for about 5 minutes, until the onion is soft
Add the beef broth and slowly bring the whole thing to a simmer
Cut up the cabbage and add it to the pot along with the sliced carrots, celery, and dried thyme
Let the stew cook on low heat for twenty to twenty-five minutes, or until the vegetables are soft and the flavors have mixed
Add salt and pepper to taste to the stew, and then serve it hot
