Summer Veggie Sandwich

This healthy and refreshing summer vegetable sandwich is a quick and easy way to fill up. That fresh vegetable and avocado salad will be a big hit at your summer party or picnic.

Ingredients:

  • 1 large ripe tomato, sliced
  • 1/2 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced
  • 4 slices whole grain bread
  • 4 tablespoons hummus
  • Handful of mixed greens
  • Salt and pepper to taste

Instructions:

Toast the slices of bread until golden brown

Spread 1 tablespoon of hummus on each slice of bread

Layer the tomato, cucumber, red onion, avocado, and mixed greens on two slices of bread

Season with salt and pepper

Top with the remaining slices of bread to make sandwiches

Slice each sandwich in half and serve
