This vegan creamed corn is rich and comforting. Its great as a side dish or a light meal. This recipe doesnt have any gluten or dairy. It uses coconut milk to make it creamy and nutritional yeast to add flavor.
Ingredients:
- 4 cups corn kernels fresh or frozen
- 1 cup unsweetened coconut milk
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 tablespoon cornstarch
- 1 tablespoon nutritional yeast
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
Put 2 cups of corn kernels and coconut milk in a blender and blend until smooth
Put olive oil in a pan and heat it over medium-low heat
When you add the minced garlic and diced onion, saut until the onion turns clear
Put in the last two cups of corn kernels and cook for three to four minutes
Add the cornstarch, nutritional yeast, and blended corn mixture
Stir to mix
For about 5 to 7 minutes, stir the mixture every now and then as it thickens
Add pepper and salt to taste
Add chopped parsley as a garnish before serving
